Some of you had requested recipes. So, here is the recipe for this bad boy. It's a Thai Chicken Noodle Salad from Everyday Food magazine. Of course, I'm substituting the chicken with tofu.

(But maybe they should, because I really do give all my best secrets away on Twitter… ahem.)
The gazpacho recipe is from the fabulous Ree, aka The Pioneer Woman. And it really is one of the better gazpacho's I've found.
And this salad?
Why it's just spinach, blueberries and strawberries. Pick a dressing and enjoy!

Hey Cathy,
Remember back when Emily waters lost a bunch of weight? I got new drivers license the day Heidi posted on her blog and was appauled and depressed at the picture. I also happened to be in the middle of press checks and near a book store so I glanced through the diet books. “Skinny Bitch” stood out so I picked it up and read through half of it before I had to be back at the press, I bought it and read the rest later that night. For whatever reason it just clicked and made sense so we decided to be vegan. Most of my family thought I was crazy but I lost 70 pounds, had more level moods, clearer skin and felt better than ever before. I don’t know if it was technically related but I was also able to get pregnant after 7 years of trying. (I don’t think they talked about the acidity of yourbody in SB, but your blood type determines how acidic your body is, or should be. Lots of meat and sugar increases your acidity and can casue infertility among other things)Of course now that I’ve had the baby I have to do it all over again, but at least I know how and I know I can.
Anyway… good luck with it, it was the only thing that worked for me. oh, as a side note, vegan cook books were not very helpful. They had weird and nasty ingredients, it was much easier and tastier to alter regular recipes.

Yummm … that salad looks great! We do one with baby spinach leaves, a tin of tuna, some mixed beans, and red wine vinagerette dressing. It’s the best summer salad! My daughter, who is totally blueberry obsessed, would like this version … I’ll have to try it when the weather warms up.
